Ingredients
- 6 slices bacon
- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 cup shredded cheddar cheese
- Nonstick cooking spray
Instructions
- 1
Preheat oven: Preheat the oven to 300°F.
- 2
Cook bacon: In a skillet over medium heat, cook the bacon until crisp. Drain on paper towels and crumble.
- 3
Blend eggs: In a blender, combine eggs, cottage cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- 4
Stir ingredients: Stir in the shredded cheddar cheese and crumbled bacon.
- 5
Fill tin: Spray a muffin tin with nonstick cooking spray. Pour the mixture evenly into the cups, filling each about 3/4 full.
- 6
Prepare steam: Fill a 9x13-inch pan with water, about 1/4 full. Position it on the bottom rack of the oven to generate steam for gently cooking the eggs.
- 7
Bake: Place the muffin tin filled with the egg bite mixture onto the middle rack of the oven. Bake for 20 to 22 minutes, or until the centers are set.
- 8
Cool: Let the egg bites cool in the pan for 5 minutes before removing. Serve warm.
