This easy Instant Pot or slow cooker sausage and potato soup combines smoky beef sausage, tender potatoes and spinach in a creamy, flavorful broth that's ready in under 30 minutes.

📝 Ingredients

  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage
  • 1/2 cup finely diced onion
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Pinch of red pepper flakes
  • 1 tsp garlic powder
  • 1 1/2 pounds russet potatoes, peeled and cut into 1/2 inch cubes
  • 1/2 cup half and half or heavy cream
  • 1 cup chopped spinach or kale
  • Salt, to taste

👨‍🍳 Instructions

  1. 1--- Instant Pot Instructions: ---
  2. 2Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown. Add in the onions and saute for 3 minutes.
  3. 3Pour in the broth and scrape bottom of pot so that nothing is sticking. Keep the Instant Pot on the saute setting so the broth can start heating up while you gather the other ingredients.
  4. 4Add in the Italian seasoning, red pepper, garlic powder and potatoes.
  5. 5Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. 6Temper the half and half by stirring a cup of hot broth into it. Stir the mixture into the pot. Stir in the spinach. Taste test and add salt, if needed.
  7. 7Ladle into bowls and serve.

  9. 9Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown. Add in the onions and saute for 3 minutes. Transfer to the slow cooker.
  10. 10Stir in the broth, Italian seasoning, red pepper, garlic powder and potatoes.
  11. 11Cover and cook on low for 3-4 hours.
  12. 12Temper the half and half by stirring a cup of hot broth into it. Stir the mixture into the slow cooker. Stir in the spinach. Taste test and add salt, if needed.
