An easy Instant Pot or slow cooker pantry soup made with sausage, red beans and rice for a quick, no-grocery-run dinner.

📝 Ingredients

  • 8 oz ground sausage
  • 2 Tbsp dried onion
  • 6 cups chicken broth
  • 1 (8 oz) package Zatarain’s red beans and rice
  • 1 (15.5 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can fire roasted tomatoes
  • 1 cup frozen sweet corn

👨‍🍳 Instructions

  1. 1--- Instant Pot Instructions: ---
  2. 2Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.
  3. 3Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. 4Add in the remaining ingredients.
  5. 5Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button to 3 minutes (or pressure cook on low for 3 minutes). When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. 6Stir. Ladle into bowls and serve.

  8. 8Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Transfer to slow cooker.
  9. 9Add in the remaining ingredients.
  10. 10Cover and cook on low for 3-4 hours.
  11. 11Stir. Ladle into bowls and serve.
