📝 Ingredients

  • 1 tablespoon olive oil
  • 1 small onion (diced )
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup pearl couscous
  • 1 1/2 cup vegetable (or chicken broth (low sodium))
  • 1/2 cup chopped fresh herbs (basil and cilantro)
  • 1/2 lemon (zested and juiced)
  • 1/2 tablespoon olive oil (optional)

  1. 1Heat 1 tablespoon of oil in a pot over medium heat. Add the diced onions and saute for 2 minutes, then add the garlic and saute for 1 minute. Add salt and pepper.
