📝 Ingredients

  • 1 pound salmon filet
  • 1 lemon (sliced in 1/4-inch rounds)
  • 1 lemon (fresh juice )
  • 2 sprigs of fresh thyme
  • 2 tablespoons olive oil
  • 8-10 cherry tomatoes
  • 1 red onion (sliced into rings)
  • 2 garlic cloves (minced)
  • 2 bay leaves
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)

👨‍🍳 Instructions

  1. 1--- Making the lemon mixture ---
  2. 2Slice one lemon into ¼-inch rounds. Squeeze the juice out of the other lemon in a small bowl.
  3. 3Add olive oil and freshly squeezed lemon juice to a small mixing bowl.
  4. 4Toss the grated garlic cloves, sea salt, and ground black pepper. Mix until well combined.
  5. 5--- Baking the salmon ---
