Soy Sesame Raw Carrot Salad

This refreshing raw carrot salad with soy sesame dressing comes together so quickly and easily with a handful of ingredients. Crisp-tender carrots tossed with green onions, sesame seeds, and a flavorful homemade dressing, this is the perfect spring or summer salad!
Ingredients
- 4 to 5 large carrots (peeled and ribboned)
- 1 1/2 tablespoons soy sauce (low sodium)
- 2 tablespoons sesame oil
- 1 tablespoon maple syrup (or honey)
- 1/2 tablespoon rice vinegar (unseasoned)
- 1 tablespoon minced garlic
- 1 tablespoon sesame seeds (toasted)
- 2 green onions (sliced)

In a small bowl, mix together the soy sauce, sesame oil, maple syrup, rice vinegar, and minced garlic.
