Stuffed Sweet Potatoes (5 Filling Options)

- 1 tbsp Lime juice
- 1 tbsp Taco seasoning
- 1/2 cup Cheddar cheese ((shredded))
- 2 tbsp Sour cream
- 1/2 medium Jalapeno ((sliced thinly))
- 1/2 medium Avocado ((diced))
- 4 tsp Fresh cilantro ((chopped or whole leaves))
- 1 tbsp Olive oil
- 1 lb Ground beef
- 1 tsp Sea salt
- 1/2 tsp Black pepper
- 1 cup Marinara sauce
- 1 tsp Italian seasoning ((optional))
- 1/2 cup Mozzarella cheese ((shredded))
- 2 tbsp Fresh basil ((cut into ribbons))
- 2 cups Broccoli ((cut into small florets))
- 1/4 tsp Sea salt
- 1/8 tsp Black pepper
- 3/4 cup Cheddar cheese ((shredded, divided into 1/2 cup and 1/4 cup))
- 8 oz Small shrimp ((peeled, deveined, and tails removed))
- 1 tbsp Fajita seasoning
- 2 tbsp Olive oil ((divided))
- 2 tbsp Lime juice
- 2 cloves Garlic ((minced))
- 1/2 medium Onion ((sliced))
- 1 medium Bell pepper ((sliced; I used 1/2 red and 1/2 yellow))
- Fresh cilantro ((optional, for garnish))

Preheat the oven to 425 degrees F (218 degrees C). Line a baking sheet with foil or parchment paper.

Place the potatoes onto the prepared baking sheet. Use a fork or knife to pierce small holes all over the potatoes (about 4-5 spots per potato is enough).
