Ingredients

  • 6 tablespoons unsalted butter (, divided)
  • 1 yellow onion (, finely chopped)
  • 1 garlic clove (, minced)
  • 1/4 cup flour
  • 2 cups whole milk
  • 1 large egg
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon paprika
  • 1 cup Parmesan cheese (, grated)
  • 1 cup mozzarella cheese
  • 4 cups yellow squash (, sliced into 1/2" thick circles)
  • 4 tablespoons unsalted butter
  • 1 cup ritz crackers (, crushed)
  • 1/4 cup grated parmesan

Instructions

    --- Casserole: ---

    Prep: Preheat oven to 400 degrees and spray a 9x13" baking dish with vegetable oil spray.

    Melt: Add 3 tablespoons butter to a large skillet on medium heat.

    Saute: Add the onions and cook until just translucent, about 4-5 minutes.

    Cook: Add in the garlic and cook until just fragrant, about 30 seconds.

    Melt: Add in remaining butter.

    Whisk: In a separate bowl whisk together flour, milk, egg, salt, black pepper and paprika.

    Stir the egg mixture into the butter and onions until combined.

    Simmer: Bring to a simmer until it just begins to thicken, about 2-3 minutes.

    Mix: Add in Parmesan cheese, mozzarella cheese and squash.

    Coat: Stir to coat, then pour into baking dish.

    Melt: Add butter to a large skillet on medium heat.

    Stir: When melted add ritz crumbs and parmesan cheese.

    Brown: Stir to coat well and cook until crispy and just beginning to brown, stirring occasionally until it begins to brown.

    Bake: Add to the top of the casserole and bake for 30 minutes.
