- 1/2 cup water
- 1/2 cup chicken broth
- 2 tablespoons soy sauce
- 2 tablespoons minced garlic (about 6 cloves)
- 1 tablespoon grated ginger (or 1 teaspoon ground ginger)
- 2 teaspoons cornstarch
- 1 teaspoon honey
- 2 pounds boneless skinless chicken breast (cubed)
- 1/2 medium yellow onion (thinly sliced)
- 1 medium red bell pepper (cut into 1/2-inch strips)
- 1 medium green bell pepper (cut into 1/2-inch strips)
- 2 cups broccoli florets
- 2 cups snow peas
- 1 cup shredded carrots
- 1/4 cup sliced green onion
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons minced garlic (about 6 cloves)
👨🍳 Instructions
- 1In a small bowl, whisk together 1/2 cup water, 1/2 cup chicken broth, 2 tablespoons soy sauce, 2 tablespoons minced garlic, 1 tablespoon grated ginger, 2 teaspoons cornstarch, and 1 teaspoon honey. Set the sauce aside.
- 2Cut 2 pounds boneless skinless chicken breast into bite-sized cubes. Set aside.
- 3Thinly slice 1/2 medium yellow onion, cut 1 medium red bell pepper and 1 medium green bell pepper into ½-inch strips, and measure out the 2 cups broccoli florets, 2 cups snow peas, 1 cup shredded carrots, and 1/4 cup sliced green onion. Set aside.
- 4Heat a large wok or skillet over high heat. Add 2 tablespoons vegetable oil and 2 tablespoons sesame oil.
- 5Add the cubed chicken to the hot pan. Season with 1 teaspoon salt and 1 teaspoon black pepper. Cook for 5–10 minutes, tossing occasionally, until the chicken is browned and mostly cooked through.
- 6Add 2 tablespoons minced garlic, the sliced onion, bell peppers, broccoli, snow peas, and carrots. Stir-fry for 5 minutes, or until the vegetables begin to soften.
- 7Pour the sauce mixture into the pan. Reduce heat to medium and cook for about 5 minutes, stirring frequently, until the sauce thickens and coats the chicken and vegetables.
- 8Serve hot over steamed rice or noodles. Garnish with sliced green onions.
