📝 Ingredients

  • 1 pound boneless, skinless chicken breasts (cut into 6 pieces (2 breasts))
  • 1/4 cup flour
  • 1/4 cup grated Parmesan cheese (sandy texture, see note 1)
  • 1/2 teaspoon salt (plus more as needed)
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon unsalted butter
  • 1 lemon (optional)

👨‍🍳 Instructions

  1. 1Combine Breading: In a shallow bowl, mix flour, Parmesan, salt, pepper, paprika and garlic powder.
  2. 2Prepare Chicken: Cut each chicken breast into 3 pieces, place between two sheets of plastic wrap, and pound to 1/4-inch thickness. Rub chicken with 1 tablespoon olive oil (divided between both sides). Coat evenly in the flour mixture.
  3. 3Cook Chicken: Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add half the chicken pieces and cook for 3–4 minutes on one side until golden brown. Flip and cook for 1–2 minutes on the other side.
  4. 4Finish: Transfer cooked chicken to a plate, sprinkle lightly with salt and optional lemon juice, and cover with foil to keep warm. Cook remaining chicken, adding more oil if needed.
