  • 2 cups grated mozzarella cheese, divided
  • 1 ½ cups grated sharp provolone cheese, divided
  • 1 cup grated Parmesan cheese, divided
  • 4 russet potatoes, peeled and thinly sliced
  • 1 small yellow onion, peeled and thinly sliced
  • 4 garlic cloves, peeled and thinly sliced
  • 3 ounces thinly sliced speck or prosciutto
  • 2 tablespoons fresh chopped parsley
