  • 2 large chicken breasts ((cut into strips))
  • 2/3 cup canola oil (for frying)
  • 1/2 cup baking mix ((any all-purpose pancake mix))
  • 3 eggs
  • 1/2 tsp baking soda
  • 2 tbsp white distilled vinegar
  • 1 tsp salt
  • 1/2 tsp black ground pepper

Modo de preparo

  1. 1

Tenderize chicken strips: Tenderize the chicken strips: sprinkle baking soda over the meat then add the vinegar (mixture should fuzz). Add the salt and pepper and mix to combine. Set aside. Meanwhile heat the oil in a medium pot over medium heat.

  2. 2

make wet batter and coat chicken: Make the wet batter: whisk together 1/2 cup baking mix and 3 eggs until smooth. Coat the chicken strips in the batter and gently let any excess batter drip off.

  3. 3

Fry chicken strips until fluffy and golden brown: Fry the chicken strips for 2-3 minutes on each side. The chicken fingers should be fluffy, airy, and golden brown. Work in batches to not overcrowd the pan.
