Cuscuz com alho crocante

Esta receita de cuscuz com alho é uma das minhas opções quando quero um acompanhamento saboroso e simples de preparar. Ela é bastante inspirada no meu arroz na manteiga com alho, outra receita favorita da minha família. O alho usado de duas maneiras — em chips crocantes e picado e refogado — torna esta receita muito especial.
Ingredientes
- 10 cloves garlic
- 3 tablespoons olive oil
- 1 3/4 cups chicken stock
- 1/2 teaspoon salt
- 1 1/2 cups couscous (see notes)
- 1/4 cup minced parsley
- 1 tablespoon lemon juice (fresh is best)

prep garlic: Instructions Cut half of the garlic cloves into thin slices. Mince the other half of the garlic.

cook garlic chips: Heat the olive oil in a medium pot over medium heat. Add the sliced garlic and let it cook for 3-4 minutes, until it's golden. Using a slotted spoon, remove the crispy garlic chips from the pot. NOTE: if some darken quicker, remove the darker ones first.

cook couscous: Add the minced garlic to the pot and let it cook for 1 minute. Add the stock and salt and bring the pot to a boil. Stir in the couscous, cover the pot, and let it simmer for 5 minutes, reducing the heat if needed.

let rest: Remove the pot from the heat and set it aside, covered, for 5 minutes. Fluff the couscous with a fork and then stir in the parsley and lemon juice.
