Preheat the oven to 392 °F (200 °C). Lightly grease a small deep baking tray or baking dish with a little oil.
- 3
Wash the asparagus and cut off the woody ends, peeling the lower third if necessary. Wash the tomatoes as well and spread them on the prepared baking sheet with the asparagus spears.
- 4
Pour olive oil, balsamic vinegar and agave syrup in a cup. Press in the garlic, season with a little salt and pepper and mix everything together. Drizzle the marinade over the asparagus and tomatoes. Spread the vegan feta on top and bake for 10 minutes. Sprinkle with slivered almonds and bake for another 10 minutes, until asparagus is tender (the total cooking time depends on the type and thickness of the asparagus spears).
- 5
Remove from oven, garnish with fresh lamb's lettuce and serve with desired side dishes such as crispy baked potatoes, creamy risotto or fresh homemade bread.
- 6
Enjoy!
