Saag bhaji – receita indiana de espinafre

Ingredientes
- 550 g Spinach
- 1 Red Onion
- 4 large Garlic Cloves
- 1-4 Red Chillies (add desired amount to your heat tolerance)
- 3 tbsp Vegetable Oil
- 1/4 tsp Asafoetida
- 1/4 tsp Cumin Seeds
- pinch of Salt (to taste)
- 1 tbsp Vegetable Oil
Modo de preparo

Chop: Roughly chop 550 g Spinach

Dice: Finely slice or dice 1 Red Onion, finely dice 1-4 Red Chillies (depending on your heat tolerance) and 4 large Garlic Cloves.

Heat 3 tbsp Vegetable Oil in a pan over low heat stir in 1/4 tsp Cumin Seeds and 1/4 tsp Asafoetida

Infuse: Next, add chopped chillies and garlic, stir to infuse the oil with the ingredients.

Sautee: Add onions and continue to cook on low for 5 mins until soft, regularly stirring to prevent burning.

Spinach: Add chopped spinach and stir.

Salt: Once all the spinach has wilted, add a pinch of Salt to help draw out the moisture.

Drain: After 10 minutes more of cooking, pour out the excess water from the spinach.

Fry: Add 1 tbsp Vegetable Oil and gently fry the spinach for 5-10 minutes longer.

Serve with other Indian dishes, rice and salad.
