Ingredientes

  • 2 7-ounce flat iron steaks
  • 1 tablespoon coarsely ground or crushed peppercorns
  • 1 tablespoon bacon grease
  • 4 ounces salted butter (soft)
  • 2 ounces of crumbled blue cheese
  • 1 tablespoon minced parsley
  • 2 teaspoons minced shallot

Modo de preparo

  1. 1

--- Prepare the blue cheese compound butter ---

  2. 2

Place 4 ounces of salted butter in a small mixing bowl and mash it with a fork until smooth.

  3. 3

Stir in the crumbled blue cheese, minced shallot, and parsley.

  4. 4

Scoop the compound butter onto waxed paper, centering it lengthwise.

  5. 5

Roll the mixture into a log, twist the ends, and refrigerate.

  6. 6

    --- Cook the steaks ---

  7. 7

Place a cast-iron skillet over medium heat.

  8. 8

While it's heating, pat the steaks dry with a paper towel. Rub a little olive oil over all surfaces and season with salt.

  9. 9

Spread the coarsely ground peppercorn onto a plate and press the steaks onto it, coating all sides.

  10. 10

Next, add bacon grease to the hot skillet and give it a swirl.

  11. 11

Place in the seasoned steaks and cook for 5-7 minutes per side. For medium rare, aim for an internal temperature of 135°F (60°C) and 145°F (65°C) for medium.

  12. 12

After cooking, transfer the steaks to a plate, covering them lightly with foil for about 15 minutes. To finish, garnish with a slice of compound butter and serve.
