This Ground Turkey Teriyaki Stir Fry is a quick, 30-minute weeknight meal made with veggies, lean ground turkey, and a sweet homemade teriyaki sauce served over rice.

📝 Ingredients

  • 2 teaspoons avocado oil
  • 500g/ 1 lb ground turkey breast
  • 4 spring onions, chopped
  • 1 head broccoli, cut into florets
  • 1 red capsicum (bell pepper), chopped
  • 1 carrot, thinly sliced
  • 3/4 cup chicken bone broth
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 tablespoons arrowroot starch or cornflour

👨‍🍳 Instructions

  1. 1Heat avocado oil in a large skillet or wok over medium-high heat, then add the ground turkey and cook for 3 to 4 minutes, breaking it into small chunks as it cooks.
  2. 2Add the broccoli, spring onions, carrots, and red pepper. Cook for another 3 to 4 minutes or until the turkey is no longer pink.
  3. 3While the turkey and veggies are cooking, whisk together the sauce ingredients (broth, soy sauce, honey, rice vinegar, sesame oil, fresh ginger, garlic, arrowroot starch) in a jug.
