One Pan Breakfast Potatoes and Eggs Recipe. Cubed potatoes with bacon, peppers and eggs all baked. This easy breakfast is prepared completely in one sheet and ready in just 30 minutes.
📝 Ingredients
- 3/4 lb potatoes, 1/2" cubes
- 6 oz bacon, cut into four
- 1/2 green or red pepper, 1/2" cubes
- 1/3 medium red onion, 1/2" cubes
- 4 Tbsp canola oil (or Olive oil)
- 4 large eggs
- butter, optional
- 3/4 tsp salt, or to taste
- 1/2 tsp ground paprika
- 1/4 tsp ground black pepper
- 1/4 tsp garlic powder
👨🍳 Instructions
- 1Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- 2Peel and cube potatoes into small even cubes, about 1/2" in size.
- 3Rinse potatoes in cold water and pat down dry.
- 4Cube pepper and onions.
- 5Add potatoes, onion and peppers to the baking sheet.
- 6In a bowl combine the ingredients for the seasoning.
- 7Drizzle oil over everything and season. Gently toss to coat.
- 8Cut bacon strips into four, add through the other ingredients.
- 9Cook for 15 minutes, or until the bacon is crispy and potatoes are almost done. Gently toss.
- 10Create four wells in potatoes.
- 11Break an egg into each well.
- 12Cook an additional 6-10 minutes, or until the eggs are cooked to desired doneness.
- 13Serve with avocado.
