📝 Ingredients

  • 1/2 pound ground beef
  • 2 teaspoons cumin powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon cayenne pepper
  • 5 ounces tortilla chips (1 small bag; or plantain chips)
  • 1 cup black beans (drained and rinsed)
  • 1 small red onion (diced)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 2 tablespoons unsweetened nut milk (or water)
  • 1 cup salsa
  • 1 large avocado (cut into chunks)
  • 2 tablespoons fresh minced cilantro
  • Optional Toppings (Sliced black olives, pickled jalapeno, radish slices, and any other nacho toppings you enjoy)

👨‍🍳 Instructions

  1. 1Preheat oven to 350°F. Line a large baking sheet with parchment paper, and set aside. Line a plate with paper towels, and set aside.
  2. 2In a medium-size saucepan over medium-high heat, brown the ground beef until cooked through. Add the cumin, garlic powder, salt, and cayenne, and mix well to combine. Transfer the meat to the paper towel-lined plate to drain.
  3. 3Spread the tortilla chips or plantain chips in a single layer on the prepared baking sheet. Top with the beef mixture, black beans, red onion, and cheese. Bake in oven for 10 minutes, or until the cheese is melted and the beans and onions are warmed through.
  4. 4While nachos are baking, whisk together the sour cream and milk or water until smooth. Set aside.
  5. 5Remove nachos from the oven, then top with salsa, avocado, cilantro, and any other toppings you like.
  6. 6Drizzle the nachos with the sour cream mixture. Serve immediately.
