You'll be sittin' cool as a cucumber with this refreshing Cucumber Mojito! This fun riff on a classic mojito is the ultimate thirst-quenching cocktail of summer, with the cooling flavors of mint and cucumber, plus bubbly club soda!
📝 Ingredients
- 8 large fresh mint leaves
- 4 slices fresh cucumber (about 1/8" thick (I use an English cucumber))
- 1 slice fresh lime (about 1/8" thick)
- 2 ounces freshly squeezed lime juice
- 2 ounces white rum
- 1 ounce orange liqueur (such as Cointreau)
- 1 ounce simple syrup (use more or less, to taste)
- 3 ounces chilled club soda
- mint sprigs (cucumber slices, and lime slices - optional garnish)
👨🍳 Instructions
- 1To a tall glass, add mint leaves, cucumber slices, lime slice, lime juice, rum, and orange liqueur. Muddle everything together, crushing the mint, cucumber, and lime to release their flavor.
- 2Add ice to the glass, then top with club soda. Give the drink a quick stir to combine.
- 3Garnish with lime and/or cucumber slices. Enjoy immediately.
