You're going to love these incredibly juicy garlic parmesan chicken skewers. Basted with a garlicky butter sauce, they are so delicious and the perfect easy recipe.

📝 Ingredients

  • 1 1/3 lb (750g) boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp garlic powder
  • 2 tsp paprika
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 cup butter (melted)
  • 6 garlic cloves (minced)
  • 6 tbsp grated parmesan cheese
  • 2 tsp lemon juice
  • 1 tbsp chopped parsley
  • 1 tsp salt
  • 1/2 tsp pepper

👨‍🍳 Instructions

  1. 1Slice the chicken into bite-size pieces and place in a large bowl.
  2. 2Stir together the oil, lemon juice and seasonings then pour over the chicken.
  3. 3Stir to combine and allow to marinade for at least 20 minutes. (You can also marinate the chicken in a ziploc bag.)
  4. 4Soak wooden skewers in hot water while the skewers are marinating (metal skewers also work well).
  5. 5Thread the marinated chicken pieces onto the skewers.
  6. 6Combine melted butter, minced garlic, finely grated parmesan cheese, parsley, salt and pepper in a small bowl.
  7. 7Add a squeeze of lemon juice, taste and adjust the seasoning if necessary.
  8. 8Cook the chicken in a preheated grill pan or on an outdoor grill over medium-high heat for 12-15 minutes, turning regularly, until the chicken is golden brown on all sides and cooked through.
  9. 9Brush the parmesan butter sauce over the chicken for the last 2 minutes of cooking to prevent the garlic from burning.
  10. 10Remove from the grill, allow to rest for 2 minutes then serve.
