Lentil Kale Soup with Potato (Easy!)

This delicious lentil soup is brimming with plant-based nutrients! It's easy to make with simple pantry staples, so hearty, and customizable.
📝 Ingredients
- 1 yellow onion
- 2 medium carrots
- 3-4 cloves garlic
- 8 oz. gold potato
- 6 cups vegetable broth
- 15 oz. can diced tomatoes
- 1 cup green/brown lentils
- 3-4 cups fresh kale (curly or lacinato)
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
👨🍳 Instructions
- 1Dice onion and carrot.
- 2In a large stockpot over medium-high heat, sauté onion and carrot for about 7-8 minutes. (I use 3 Tbsp. water/broth for no-oil sauté method, adding more as needed.)
- 3Meanwhile, mince garlic and dice potato.
- 4Add garlic, potatoes, cumin, and paprika to pot. Stir and sauté 1 minute.
- 5Add broth, diced tomatoes, and lentils (rinsed and drained).
- 6Increase heat and bring to a light boil. Then reduce heat, cover, and simmer for about 25-30 minutes or until lentils are tender.
- 7Meanwhile, roughly chop kale, large stems removed.
- 8Stir in the kale during the last few minutes of cooking. Then salt & pepper to taste as desired.
