This easy chicken goulash is a healthier twist on traditional Hungarian goulash. It’s super flavourful and easy to make in one pot for a hearty, comforting weeknight dinner.

📝 Ingredients

  • 1 tablespoon olive oil
  • 20 g (1 tablespoon) butter
  • 450 g (1 lb) boneless chicken thighs, cut into bite-size pieces
  • 1 medium onion, diced
  • 1 medium carrot, sliced
  • 2 celery stalks, diced
  • 4 garlic cloves, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons plain flour
  • 3 tablespoons Hungarian paprika
  • 1/2 teaspoon caraway seeds
  • 1 x 400 g (14 oz) can chopped tomatoes
  • 250 g (1/2 lb) potatoes, peeled and cubed
  • 250 ml (1 cup) chicken stock
  • A handful fresh parsley, finely chopped
  • Salt and freshly ground pepper to taste
