Hot and fast grilled, tender lamb ribs seasoned with a mix of savory herbs and spices

📝 Ingredients

  • 2 racks of lamb ribs
  • 3 tsp kosher salt
  • 2 tbsp lemon pepper
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil (extra virgin)

👨‍🍳 Instructions

  1. 1--- Lemon Pepper Lamb Ribs ---
  2. 2Remove the membrane off the back of the lamb ribs.
  3. 3Trim off any excess fat from the top of the meat side as this will not render down.
  4. 4Split the rack into individual ribs.
  5. 5Add all the seasoning ingredients to a bowl and mix well to combine.
  6. 6Lightly coat the ribs in oil and sprinkle with the seasoning ensuring they all get an even coating.
  7. 7Heat the BBQ grill up for indirect heat and wait until the grill is hot before putting the ribs in.
  8. 8Place the ribs in the BBQ away from the direct heat and place the lid back on.
  9. 9Cook for 45 minutes, turning the lid every 15 minutes to ensure and even cook.
  10. 10Once cooked, remove from heat and allow cooling for 5 minutes.
  11. 11--- To Serve ---
  12. 12With roasted and grilled vegetables or a fresh salad.
  13. 13Although as a snack, I just eat them on their own.
