📝 Ingredients

  • 2 tablespoons olive oil
  • 4 thin sweet potatoes, peeled and chopped into 1/2-inch rounds
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup vegetable broth
  • 1 tablespoon minced garlic
  • 1 teaspoon Dijon mustard
  • 3 tablespoons butter, sliced into 1/4” pieces
  • 3 thyme sprigs

👨‍🍳 Instructions

  1. 1Preheat the oven to 400 F.
  2. 2Heat the oil in a braising pan or oven-proof skillet over medium heat.
  3. 3Once hot, add the potatoes and sear on each cut side until browned, about 3 minutes each. Season with salt and pepper.
