Sweet and jammy blistered cherry tomatoes form the base for a log of creamy baked goat cheese in this easy and crowd-pleasing 1-skillet appetizer.

📝 Ingredients

  • 4 tablespoons olive oil, divided
  • 3 cups whole grape or cherry tomatoes
  • 3 cloves garlic, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/3 cup pitted kalamata olives, halved
  • 1 (8-ounce) goat cheese log, chilled
  • Zest from one lemon
  • 2 tablespoons slivered fresh basil
  • Baguette for serving

👨‍🍳 Instructions

  1. 1Preheat the oven to 375 F.
  2. 2Add 2 tablespoons of oil to a cast iron skillet and bring the heat to medium-high.
  3. 3Add the tomatoes and cook without stirring until the skins blacken and split, about 4 minutes.
  4. 4Cook for about 8 more minutes, stirring and pressing down to burst open each tomato.
  5. 5Remove the skillet from the heat and stir in the remaining olive oil, garlic, oregano, salt, black pepper, and red pepper flakes to the hot pan.
  6. 6Stir in the olives.
  7. 7Place the goat cheese log in the center of the skillet.
  8. 8Put the skillet in the oven and bake until the cheese is soft and warmed through, 12 to 15 minutes.
  9. 9Sprinkle with the lemon zest and basil.
  10. 10Serve with baguette slices straight from the pan or transfer to another serving dish.
