📝 Ingredients

  • 4 large egg
  • 1 tablespoon heavy whipping cream
  • salt (to taste)
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cup spinach
  • 1/2 cup cheddar cheese (grated)

👨‍🍳 Instructions

  1. 1Crack the eggs into a bowl or container.
  2. 2Add heavy cream to the mixture with some salt and pepper to taste.
  3. 3Mix them up so that there is still some egg white showing in the mixture.
  4. 4Get a large pan and place over high heat. Add olive oil.
  5. 5Let the olive oil get to the smoking point, then add your spinach.
  6. 6As it’s sizzling away, add some salt and pepper. Make sure you are stirring it frequently as it can burn if you are not careful. Once it has reduced down, turn your heat to medium-low.
  7. 7Add the egg mixture to the spinach.
  8. 8Slowly stir the eggs when the bottom sets.
  9. 9Add the cheddar cheese and stir that deliciousness in.
  10. 10Once the cheese is starting to melt, get it on a plate.
