Swedish Pancakes are a cross between a crepe and a pancake. They have a delicate texture and my gosh, they are delicious!

📝 Ingredients

  • 1 1/2 Cups Flour
  • 1 teaspoon Baking Soda
  • 2 Cups Milk
  • 1 Cup Sour Cream (or 1 more cup of milk)
  • 3 Large Eggs
  • 3 Tablespoons Sugar (2 teaspoons for less sweet)
  • 4 Tablespoons Butter (melted)
  • 1 teaspoon Salt
  • 1 Lemon (for squeezing over the top of the pancakes)

👨‍🍳 Instructions

  1. 1In a bowl, whisk together the all the ingredients.
  2. 2Butter a crepe pan or nonstick skillet, and pour a thin layer of batter into the pan.
  3. 3Flip the pancake when bubbles start to form on top. Brush the top with melted butter after flipping.
  4. 4Then flip the pancake onto a plate and butter the other side. Sprinkle with sugar and squeeze fresh lemon over the top and roll up!
