📝 Ingredients

  • 500 grams (1.1 pounds) potatoes (peeled and cut into 1.5 -2 cm thick fries)
  • 200 grams (7 ounces) feta cheese (coarsely crumbled)
  • 6 large free-range eggs
  • olive oil (for frying)
  • coarse sea salt
  • dried oregano
  • freshly ground pepper

👨‍🍳 Instructions

  1. 1Break the eggs in a bowl and set aside.
  2. 2Add the potatoes to a strainer, season with coarse sea salt, and toss to combine. Allow to sit while the oil is heating.
  3. 3Add about 1 cm of olive oil to a frying pan and heat over medium-high heat. Note: You can use other vegetable oils; however, olive oil gives it a stronger flavor.
  4. 4Fry the potatoes until golden and crisp on the edges.
  5. 5In a non-stick frying pan, add the fried potatoes and feta cheese, and cook for a minute over high heat until the cheese starts to melt.
  6. 6Add the eggs and mix with a wooden spoon, breaking the egg yolks as you go.
  7. 7Cook until the mixture starts to set. Don't overcook to turn very crumbly, take off the heat while it's still soft and creamy.
  8. 8Serve warm with freshly ground pepper and dried oregano on top!
