This easy oven recipe is perfect for weeknight dinners when you want something hearty, flavorful, and family-friendly.

📝 Ingredients

  • 4 chicken thighs (skin-on, bone-in)
  • 1 potato (large, shredded)
  • 1 onion (finely chopped)
  • 1 tbsp olive oil
  • 1 egg
  • 2 cloves garlic (minced)
  • 2 tbsp mayo
  • 8 oz cheddar cheese (shredded)
  • 1/4 tsp salt and pepper (to taste)

👨‍🍳 Instructions

  1. 1Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. 2Place chicken thighs skin-side down on the baking sheet. Cut along and around the bone to loosen it, but don’t detach. Pull the bone to the side and wrap it in foil. Season chicken with salt and pepper.
  3. 3Heat olive oil in a non-stick frying pan over medium-high heat. Add shredded potato and onion, and sauté for 5 minutes, stirring every minute.
  4. 4In a bowl, mix the egg, shredded cheese, mayo, and minced garlic until well combined.
  5. 5Spoon the potato-onion mixture on top of each chicken thigh in a single layer. Then spread the cheese mixture evenly over the potatoes.
  6. 6Bake for 45 minutes, or until the chicken is cooked through and the topping is golden and bubbly.
