📝 Ingredients

  • 1 whole Sterlet Sturgeon (that fits on a baking tray)
  • 3 pounds (1 1/2 kg) potatoes
  • 3 tomatoes (cut in quarters)
  • 1 bunch fresh basil
  • 4 cloves garlic
  • 1/4 small red onion (to be blended in sauce)
  • 1 1/2 cups mayonnaise
  • 1 cup sour cream
  • 1/4 teaspoon spices (like Hmeli Suneli or Fish Spice) ((optional))
  • salt and pepper

👨‍🍳 Instructions

  1. 1Using a stick blender, process fresh basil, garlic, onion, mayonnaise, sour cream and salt and pepper until a smooth sauce.
  2. 2Peel potatoes and cut into wedges. Pour ½ of the basil sauce over the potatoes and mix together. Allow to marinate while your prepare the fish.
  3. 3Prepare the fish by washing the cavity - assuming fish is already gutted and cleaned.
  4. 4Slice the small tomatoes in half and place into the cavity of the sturgeon. Slather with the basil sauce to flavor the inside of the fish. Save some sauce to serve with fish.
  5. 5Preheat oven to 400°F (200°C). Place sturgeon on a foil lined baking tray and baste in basil sauce. Surround with potato wedges.
  6. 6Cover with foil and bake for 40 minutes until internal temp is 145°F (63°C). Allow extra cooking time if needed. Remove foil and allow potatoes to crisp up for 10 more minutes.
  7. 7Serve with basil sauce and enjoy.
