After almost 20 years of recipe tinkering, my favorite game is STILL "Will it taco?" I have an obscene love for tacos. Taking a different turn with these and used a grilled pork and pineapple for the filling, I was inspired by pork and pineapple tacos we had during two different trips to Mexico.

  • 1 pork tenderloin (around 1 pound)
  • 1 Tablespoon avocado oil
  • 1 Tablespoon Kosher salt
  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon finely ground pepper
  • 2 limes
  • 1 pineapple, cut into spears
  • Tortillas and taco fixings
