If you haven't tried the new trend of making pizza on a Cauliflower Pizza Crust, you are missing out on a delicious, carb-saving invention with all the goodness of pizza without the crusty calories.

📝 Ingredients

  • 12 oz frozen cauliflower rice, thawed (about 2 cups) (See Note 1)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dry oregano
  • 1/2 tsp garlic powder
  • 1/8 tsp black pepper
  • 1/4 tsp sea salt (optional)
  • 1 egg
  • 3/4 cup shredded mozzarella cheese
  • 1 tbsp goat cheese
  • 2 tbsp crumbled sheep's milk feta cheese
  • 1 tbsp sun dried tomatoes strips packed in oil
  • 1 tsp dry oregano
  • Optional garnish: fresh oregano or fresh basil

👨‍🍳 Instructions

  1. 1Preheat the oven to 400F. Line a large baking sheet with parchment paper
  2. 2Make sure the cauliflower rice is thawed. Squeeze as much water as possible out of the cauliflower rice. Place it in a bowl, add the parmesan cheese, oregano, garlic powder, and black pepper. Mix well, taste it, add salt if needed (See note 2)
  3. 3Add the egg and mix really well
  4. 4Place the cauliflower mixture on the parchment paper and form an 8" circle making the edges of the cauliflower pizza crust a little higher than the crust (See image in post)
  5. 5Bake the crust for 20 minutes. Remove the baking sheet from the oven, but leave the oven on
  6. 6Sprinkle the mozzarella cheese on top, place little dollops of goat cheese and feta cheese around the pizza crust
  7. 7Add the sun dried tomatoes and sprinkle with dried oregano
  8. 8Return the baking sheet to the oven and bake for an additional 10 minutes. Serve immediately
