This is chopped lagman, a dish I had at a Uyghur restaurant once and never forgot—tiny, chewy bites of hand-pulled noodles and tender bits of lamb, all swimming in a rich, cumin-spiced sauce. Every spoonful is packed with bold flavor, soft veggies, and the perfect amount of heat. It’s warm, hearty, and meant to be eaten with a spoon—comfort food on a whole new level.

- 3 cups all‑purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 1/4 cup neutral oil (plus extra for coating)
- 2 tablespoons neutral oil
- 12 ounces (cut into 1/4‑inch pieces)
- 1 teaspoon ground cumin
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon white pepper
- 2 teaspoons minced garlic
- 1 teaspoon ginger paste
- 1/3 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon chili paste
- 1 tablespoon brown sugar
- 2 teaspoons cornstarch mixed with 3 tablespoons cold water
- 1 cup frozen diced carrot and green pea mix
- 2 green onions (thinly sliced)

- 1--- MAKE CHOPPED NOODLES ---
- 2In a large bowl, mix the flour and salt. Slowly pour in warm water while stirring with your hand until a shaggy dough forms. Knead for about 5 minutes until smooth and elastic.
- 3Lightly coat the dough with oil and cover with plastic wrap. Let rest for 30 minutes at room temperature.
- 4Uncover the dough and place it on a lightly oiled surface. Flatten slightly and cut into 9 equal 1‑inch wide strips.
- 5Roll each strip into a short, thick cylinder. Working one at a time, stretch by gently pulling and slapping on the counter, rolling from center outward, until it forms a long rope about the thickness of udon noodles.
- 6Lightly oil a sharp knife and cut the stretched noodles into small ¼‑inch pieces. Toss the cut pieces with a bit of oil so they don’t stick to each other, and spread them on a plate or tray.
- 7Bring a large pot of salted water to a boil. Add the chopped noodle pieces and boil for 2 to 4 minutes until they float and look slightly translucent. Taste one to check—it should be fully cooked but still have a nice chew. Drain and rinse briefly under cool water. Set aside.

- 9Heat oil in a wok or deep skillet over medium‑high heat. Add lamb and sear until browned and crispy on the edges.

- 13Add the diced carrots and peas and simmer for 2 minutes until tender.
