  • 3 teaspoons grated ginger
  • 1/4 cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon oil
  • 1 pound ground pork
  • 16 ounces mushrooms, roughly chopped
  • 1 teaspoon sea salt
  • 8-12 ounces baby spinach

👨‍🍳 Instructions

  1. 1Prepare rice according to package instructions.
  2. 2Mix up stir fry sauce. Whisk together minced garlic, ginger, soy sauce, brown sugar, cornstarch, rice wine vinegar, and sesame oil in a small bowl.
  3. 3Heat oil in a large nonstick skillet or wok over medium high heat. Add ground pork to the pan and cook for 1-2 minutes, breaking up with a spatula or the back of a wooden spoon.
  4. 4Add mushrooms to the pork and season with sea salt. Cook, stirring occasionally for about 5-7 minutes, until pork is cooked through. The mushrooms will release moisture as they cook, so if they look really wet, cook until the excess moisture evaporates.
