  • 3 large zucchini (about 2 pounds)
  • 2/3 cup Italian breadcrumbs
  • 1/4 cup Parmigiano-Reggiano
  • extra virgin olive oil (as needed)
  • 3 Tablespoons parsley (finely chopped)
  • salt and pepper (to taste)
