Baked Italian Sausage and Potatoes with Green Beans is an easy one pan dinner. Serve it with a tangy sweet dijon mustard sauce for a hearty, flavorful meal.
📝 Ingredients
- 3 Tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary (or 2 teaspoons fresh)
- 1 heaping teaspoon Kosher salt
- 1 1/2 lbs. mixed baby potatoes (quartered)
- 12 ounces green beans (trimmed and halved)
- 5 mild Italian sausage links
- Fresh cracked pepper (to taste)
- 2 Tablespoons dijon mustard
- 2 teaspoons whole grain mustard
- 2 teaspoons honey
- 1 teaspoon white wine vinegar
👨🍳 Instructions
- 1Preheat the oven to 400 degrees. Line a baking sheet with foil and spray with baking spray.
- 2In a small bowl, whisk together olive oil, rosemary, garlic powder, and salt. Add the potatoes to the pan and toss with half the oil mixture. Toss the remaining oil mixture with the green beans, and set aside.
- 3Spread the potatoes over the baking sheet and bake for 10 minutes. Stir the potatoes, then nestle the green beans and Italian sausage on the pan. Sprinkle with black pepper to taste.
- 4Bake for 15 minutes then stir the vegetables and turn the Italian sausages. Bake another 10-15 minutes or until potatoes are tender and sausages are cooked through.
- 5Meanwhile, to make the sauce, whisk together all ingredients. Serve with the sausages. Refrigerate any leftovers.
