Zesty lime and fresh cilantro bring delicious flavor to this cilantro lime rice recipe. Serve it as a side dish with enchiladas or fajitas, add it to burritos or burrito bowls, or enjoy it with chicken, fish or shrimp.
📝 Ingredients
- 1 cup long grain white rice
- 2 teaspoons olive oil (or butter)
- 2 cloves garlic (minced)
- 1 1/2 cups water
- zest of one lime
- 2 tablespoons fresh lime juice (from 1 lime)
- 2/3 cup chopped fresh cilantro (tough stems removed)
- 1/4 teaspoon salt (or to taste)
👨🍳 Instructions
- 1Place the rice in a fine mesh strainer and rinse well; drain. Set aside.
- 2Add the olive oil (or butter) to a medium saucepan. Heat over medium heat. Once the pan is hot, add the rice and garlic and toast for 3-4 minutes, stirring constantly.
- 3Stir in the water and bring to a simmer.
- 4As soon as the pot comes to a boil, immediately cover the pot with a lid and reduce the heat to the lowest setting. Cook for 15 minutes, without lifting the lid on the pot. The pot should be at a very low simmer while the rice cooks.
- 5Then remove the pot from the heat and let it rest with the lid on for 10 minutes.
- 6Remove the lid and fluff the rice. Stir in the lime zest, lime juice, cilantro and salt, to taste. Serve.
