These creamy Pumpkin Pie Overnight Oats combine oats, pumpkin puree, chia seeds, maple syrup, and pumpkin spice for an easy make-ahead fall breakfast.

📝 Ingredients

  • 1 cup organic rolled oats ((Use GF-certified, if needed!))
  • 1/4 cup organic pumpkin puree ((NOT Pie filling!))
  • 1 cup Almond milk, unsweetened ((You can use your fave plant-based milk, if desired))
  • 1 Tbsp chia seeds
  • 1 tsp vanilla extract
  • 2 Tbsps pure maple syrup
  • 1 tsp pumpkin pie spice
  • Pinch of sea salt
  • Toasted nuts
  • Coconut whipped cream
  • Sprinkles of pumpkin spice or cinnamon
  • Drizzle of vegan caramel sauce
  • Drizzle of pure maple syrup
  • Toasted pumpkin seeds
  • Sprinkles of pumpkin pie spice

👨‍🍳 Instructions

  1. 1--- TO MAKE THE OVERNIGHT OATS: ---
  2. 2Add the rolled oats, chia seeds, pumpkin puree, milk, vanilla, maple syrup, and pumpkin pie spice, and salt, stirring everything together until combined and smooth.
  3. 3--- REFRIGERATE OVERNIGHT: ---
  4. 4Tightly cover bowl with plastic wrap and refrigerate overnight (or at least 4 hours).
  5. 5--- ASSEMBLY: ---
  6. 6To serve (hot or cold), add half the amount of oats mixture to a bowl or mason jar and then a few spoons of coconut whipped cream (or regular whipped cream) followed by the remaining oats mixture. Top with your fave toasted nuts, vegan caramel sauce, drizzles of maple syrup, toasted pumpkin seeds, or sprinkles of pumpkin spice, as garnish.
