📝 Ingredients

  • 4 Tablespoons olive oil (divided)
  • 2 cloves garlic (minced)
  • 8 sprigs fresh thyme (divided)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 pounds lamb shoulder chops (about 4 to 6 depending on the size)
  • 1 large sweet onion (thinly sliced)

👨‍🍳 Instructions

  1. 1Marinade: Mix together 2 Tablespoons of olive oil, garlic, 4 sprigs of thyme, salt and pepper in a large bowl. Place the lamb chops in the bowl and cover. Place in the refrigerator and allow to marinate while you prepare the onions.
  2. 2Preheat your oven to 425 F degrees.
  3. 3Caramelize: Toss the sliced onion and remaining thyme with the remaining oil and a pinch of salt and spread out on a sheet pan. Bake for 20 minutes. Stirring 2 to 3 times.
  4. 4Bake: Scrap the onions to the sides of the pan. Shake the excess marinade off of the lamb and lay in the a single layer on the baking sheet. Bake for 8 minutes. Flip and bake until desired temperature. 5 minutes for medium rare.
  5. 5Serve: Discard the thyme stems and serve the shoulder chops with the onions.
