📝 Ingredients
- 6 Tablespoons apple cider vinegar
- 4 1/2 Tablespoons maple syrup
- 1 Tablespoon dijon mustard
- 1-2 garlic cloves (minced)
- 1/4 teaspoon onion powder
- 1 1/2 teaspoons fine sea salt
- 1/4 cup shallot (finely chopped)
- freshly ground black pepper (to taste)
- 4 1/2 Tablespoons extra virgin olive oil
- 1 1/2 pounds broccoli florets (approx. 6 cups)
- 1/2 cup craisins or raisins
- 8 ounces Gruyere cheese* (diced into cubes)
- 1/3 cup sunflower seeds
- 1 red apple (diced)
- 3-4 scallions (green onions) (white and green parts thinly sliced)
👨🍳 Instructions
- 1In a small bowl or jar, combine all of the dressing ingredients except the oil. Slowly drizzle in the oil while whisking to emulsify the dressing. You can also add everything to a jar (including the oil) and shake well until combined.
- 2In a large bowl, add the salad ingredients, then toss with the dressing until completely coated. Serve immediately or place in the fridge until ready to serve (it's great cold and if it has a little bit of time to absorb the dressing).
