📝 Ingredients
- 2 bananas, very ripe
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup all-purpose gluten-free flour
- 1 tsp baking powder
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 3/4 cup milk
- 1 tbsp vegetable oil
👨🍳 Instructions
- 11. Mix all-purpose gluten-free flour, baking powder, salt, and ground cinnamon in a mixing bowl. Mix until well combined and set aside.
- 22. Mash the bananas using a fork or potato masher in a large mixing bowl. Add maple syrup and vanilla extract. Mix well until incorporated.
- 33. Add the eggs one by one, and mix well until a bit fluffy and pale.
- 44. Add the flour mixture to the banana mixture. It becomes a bit sticky but don’t worry. 5. Add the milk gradually.

- 67. Heat a nonstick frying pan over low heat. Pour ¼ cup of the batter into the pan. 8. Cook for 2-4 minutes or until the underside becomes brown. Flip the pancakes and cook again for another 2-4 minutes.
- 79. Repeat for the rest of the batter.
- 810. Serve with your favorite fresh fruit and maple syrup. Enjoy!
