📝 Ingredients

  • 1 lb. chicken breast (cut into 1/2" thick slices)
  • 2 large bell peppers (sliced into 1/2" thick slices; use a variety of colors such as red and yellow)
  • 1 small red onion (halved and sliced lengthwise into 1/2" thick strips; see note 2)
  • 2 tablespoons olive or avocado oil
  • 2 tablespoons taco seasoning (sub with your favorite store bought taco or fajita seasoning; see note 3)
  • 1 lime
  • 1/4 cup chopped cilantro (for serving, optional)

👨‍🍳 Instructions

  1. 1Place ingredients in bowl.: Place the chicken and vegetables in a large bowl and set aside.
  2. 2Toss in seasoning.: Place the olive oil and taco seasoning into a small bowl and stir to combine. Pour the mixture over the chicken and vegetable mixture and toss gently until well coated.
  3. 3Air fry.: Place the chicken mixture into the air fryer basket and cook at 400 degrees for 12-15 minutes, or until a meat thermometer inserted into the chicken registers 165 degrees. Toss the mixture about every 4-5 minutes to ensure even cooking.
  4. 4Serve.: Place the fajita mixture in a large bowl and stir in the lime juice and chopped cilantro. Add salt as needed, then serve in tortillas or bowls with your favorite toppings. Enjoy!
