📝 Ingredients
- 6 oz wild caught tilapia, raw
- ~6oz red potato
- 1/3 cup Greek yogurt
- 1 oz goat cheese
- 1 tbsp fresh chives
- 1 tsp garlic paste
- 1/2 tsp cumin
- 1 tsp cayenne pepper
- 1 tsp gumbo filé (or cumin if not available)
- 1 tsp smoked paprika
- sea salt & pepper to taste
👨🍳 Instructions
- 1Set oven to 405F.
- 2Wash red potatoes, poke holes in it using a fork, and bake for about 1 hour in the oven, or until soft. Allow the potatoes to cool.
- 3Season tilapia and bake in the oven for 8 minutes.
- 4Cut the top off a red potato and scoop out part of the inside of a red potato.
- 5Mix with baked tilapia, greek yogurt, goat cheese, cayenne, paprika and chives. Season with sea salt & pepper to taste.
- 6Re-stuff the potato with the mixture and bake for 10 minutes at 405F.
- 7If desired, add 1 tbsp Greek yogurt instead of sour cream to the top of the potato. Add a side salad and enjoy!
