Creamy banana blueberry oatmeal baked in the oven.
📝 Ingredients
- 4 small/medium bananas (1 cup mashed bananas)
- 2 large eggs
- 1 cup milk (240ml)
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1/4 cup maple syrup
- 2 tablespoons coconut oil (melted or soft, or butter)
- 3/4 teaspoon baking powder (can be omitted)
- pinch of salt
- 2 cups rolled oats (7 oz/200g)
- 1 tablespoon coconut oil (for greasing the baking dish, or butter)
- 1 cup blueberries (100g)
- 1/4 cup walnuts
👨🍳 Instructions
- 1Preheat the oven to 375°F/190°C/Gas Mark 5, no fan (if you have a convection oven, reduce the temperature by about 20° or follow the manufacturer's instructions).
- 2Prepare a 9-inch (23 cm) round baking dish (I used a pie dish) or a 8×8-inch square (20x20cm) baking dish (or similar) and grease it with 1 teaspoon of coconut oil.
- 3Mash the bananas with a fork.
- 4Add all the ingredients for the oatmeal except the oats into a medium bowl and whisk until very well combined. Next, whisk in the oats.
- 5Pour the oatmeal batter into the baking dish.
- 6Top with walnuts and blueberries.
- 7Bake for about 30 minutes or until the oatmeal is set but still creamy (not dry). The baking time may vary depending on the oven.
- 8Leave to set and cool for about 5 minutes, then serve (I like it most with plain yogurt and maple syrup).
