Tender smothered steak simmered in Thai red curry gravy with coconut milk and onions. A bold, comforting sirloin steak recipe with soul.
📝 Ingredients
- 2 8 oz Sirloin Steaks
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 medium Yellow Onion (sliced)
- 3 garlic cloves (smashed and diced)
- 3 tbsp Thai red Curry Paste
- 14 oz can coconut milk
- 1 tbsp fish sauce
- 2-3 thyme sprigs
- 1 lime (juiced)
👨🍳 Instructions
- 1Allow steaks to come to room temperature. Season both sides with salt and pepper.
- 2Brown steaks in cast ion skillet on both sides about two minutes per. Remove and set aside on paper towel lined plate.
- 3Add onions plus more oil if needed. Saute onions 2-3 minutes.
- 4Add garlic and sauté another 30 seconds.
- 5Add paste to the skillet and mix thoroughly. Add coconut plus fish sauce. Stir, add thyme, and let simmer 2-3 minutes.
- 6Add steaks back, cover, and simmer on low or bake at 325 degrees F until internal temperature reaches 135 degrees.
- 7Remove the steaks and reduce gravy to desired consistency. For thicker gravy fast, make a slurry by mixing a tbsp corn starch with 1/4 cup water or the sauce and adding it back.
- 8Add the lime juice to brighten things up.
- 9Serve steaks over rice or mashed potatoes and top with gravy and onions.
