📝 Ingredients
- seedless watermelon 4.00 cup cubed
- cucumber(s) 1.00 peeled and seeded
- red bell pepper 0.50 chopped
- tomato(es) 4.00 med cored
- seeds and membranes removed
- shallots 0.50 chopped
- jalapeño pepper 1.00 small trimmed and seeded
- sherry vinegar 1.00 tbsp
- olive oil 0.25 cup
- salt 0.50 tsp
- black pepper 0.13 tsp
- fresh basil 0.25 cup julienned
👨🍳 Instructions
- 1Place watermelon
- 2cucumber
- 3bell pepper
- 4tomatoes
- 5shallot
- 6jalapeño
- 7vinegar
- 8olive oil
- 9salt
- 10and pepper in a blender. Blend until completely smooth. Taste and adjust seasonings if needed.
- 11Refrigerate the gazpacho for at least an hour before serving.
- 12To serve
- 13divide gazpacho between bowls and top with basil. If desired
- 14add a small drizzle of olive oil.
