This easy air fryer side dish has bright Italian flavor, and because there's no breading, air fryer zucchini is healthy, too!
📝 Ingredients
- 2 zucchini (medium sized, or 3 small zucchini)
- 1 red onion
- 2 tablespoons olive oil (or avocado oil)
- 1/2 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
👨🍳 Instructions
- 1Preheat your air fryer to 400F. Meanwhile, dice the 2 zucchini and peel and dice the 1 red onion. *The diced pieces should be at least twice the size of the holes in your air fryer basket.
- 2In a bowl, toss the vegetables, 2 tablespoons olive oil, and seasonings (½ teaspoon dried basil, ½ teaspoon sea salt, ½ teaspoon dried oregano, ½ teaspoon garlic powder, and ¼ teaspoon black pepper) together.
- 3Arrange the mixture in a single layer in the air fryer basket. Close the basket and set the air fryer to cook for 20 minutes.
- 4Halfway through cook time, shake the basket or turn the vegetables with a spoon or spatula. Close and allow to finish cooking, then season to taste if needed and serve.
