This rocket salad with pear, Parmesan and lemon maple dressing is super simple and quick to make and makes for a nutritious side dish. Check out my tips for making the tastiest rocket salad above! This recipe is gluten-free, low-carb, and vegetarian-friendly.
📝 Ingredients
- 4 cups rocket leaves (washed and dried)
- 1 cup grated Parmesan cheese (aged Parmesan is best)
- 1 cup pear (1/2 of large pear, thinly sliced)
- Juice of 1/2 large lemon (about 2 tablespoons)
- 2 tablespoon olive oil
- 2 teaspoons maple syrup
- A good pinch of sea salt and pepper
👨🍳 Instructions
- 1If needed, wash and dry the rocket leaves and add them to a big salad bowl.
- 2Shave or grate Parmesan cheese over the top, about a cup.
- 3Slice half a pear into thin little strips or cubes.
- 4Add the dressing ingredients straight over the top just before serving: lemon juice, maple syrup, olive oil, sea salt and pepper. Toss everything together and serve.
