Smothered Pork Chops are a classic dish born in the South, that brings a perfect cast iron sear and savory gravy to dinnertime. This comfort food is absolutely delicious and easy to make.
📝 Ingredients
- 3 Tablespoons butter
- 3 Tablespoons oil
- 4 1-inch thick pork chops (boneless )
- 1/4 cup flour
- 1 teaspoon black pepper
- 2 teaspoons salt
- 1 white onion (sliced into rings)
- 1/2 teaspoon baking soda
- 6 ounces mushrooms (sliced)
- 2 cloves garlic clove (minced)
- 4 sprigs of fresh thyme (1 teaspoon dried thyme)
- 1 cup chicken broth
- 1/2 cup heavy whipping cream
👨🍳 Instructions
- 1Melt butter and heat oil in a large 12" cast iron skillet over medium heat on the stovetop.
- 2Dredge pork chops on both sides in a mixture of flour, salt, and pepper. Fry in the skillet for 3-5 minutes on each side until golden brown. Remove from the skillet and set aside.
- 3Add onions, baking soda to skillet and sautee for just a few minutes. Add the mushrooms, garlic, and thyme. Saute an additional 5 minutes or until skillet becomes dry if sooner.
- 4Pour in the chicken broth and whisk to release all the flavor bits from the bottom of the skillet. Pour the heavy cream and stir. Reduce for 10 minutes.
- 5Add the pork chops back into the skillet and allow to heat through, flipping once. Remove pork chops from the skillet and add in your thickening agent or simply spinkle with more fresh thyme and serve directly from the skillet.
